FourFourSeconds ago, we posted the recipe for a hearty breakfast sandwich made from rice, eggs, bacon and a little flour.
The recipe is the one that made our son (then just a toddler) cry.
We knew there had to be a way to get it to him quickly and easily, so we took a few minutes to make it, but the ingredients we used didn’t exactly make the most appetising breakfast.
So we came up with a different one that was more of a hearty soup.
It’s a big soup, which makes it ideal for the kids.
It is hearty and rich in flavour.
You don’t need a blender or any fancy equipment to make the soup, just some basic ingredients and a big pot of water.
Here’s what you need to make an easy, nutritious breakfast sandwich:1.
Bring all the ingredients together in a large pot.
Cook the rice for about 10 minutes, or until it is tender.2.
Once the rice is tender, drain the water and set aside.3.
Add the rice, bacon, eggs and bacon fat to the pot.
Add salt and mix well.4.
Pour the soup into the pot, covering the bottom.
Add a splash of water and cook over a low heat for 10 minutes.5.
The soup will thickens and becomes mushy as it simmers.
The longer it simms, the better the soup will be.
Once the soup is cooked, add the flour and mix it well.
Pour it into the bowl of a blender.
Add 1 tablespoon of the salt and blend for a few seconds.6.
When the soup has thickened enough, add a splash more of the water to the blender.
Pour into the prepared pot and cook for about 15 minutes, stirring occasionally.
If the soup becomes too thick, add more water.7.
When it is done, add 1 tablespoon more of salt and stir to combine.
Add more water if needed to thicken.8.
It will be very thick.
If you’d like to make this for a big breakfast, you could also serve it over brown rice.9.
Serve the soup with some bread and a cup of milk.
